Spring is almost here! Shopping at farmer’s market this morning there were some beautiful heads of purple, green and white cauliflower. Now, I am not the biggest fan of cauliflower but it is another vegetable that I love roasted! I have company tomorrow and these delectable vegetables will work their way into my menu.
So far the menu us:
Grilled New Zealand Sea Bass
Tomato, Basil, Feta Cheese Topping for fish
Roasted cauliflowers with baby yellow summer squash, Leeks, Shallots
Spinach with Arugula Greens and Pomegranate Seeds with Raspberry Balsamic Dressing
Key Lime Pie (dairy free and gluten free)
Key lime pie is new for me. I will be experimenting and creating a recipe. If it’s edible, I’ll post the recipe. If it’s worthy of a picture I’ll post that too. Check in later for results on all these dishes.
