America (or at least California) has fallen in love with Kale and I am so happy. I’ve been eating it for over 30 years, even sauteing with scrambled eggs, putting it in soups and stews. Winter is the best time for kale as it is in the cabbage family and colder nights, (do you remember those?), help the kale to become sweeter. Kale is the king of nutritionally dense vegetables offering more minerals that just about anything else. A close second is collard greens which haven’t yet gotten the respect it deserves.
