4 cups of loosely packed fresh spinach
12 strawberries, cleaned, hulled and sliced
2 hearts of palms, sliced
¼ cup candied walnuts
Poppy Seed Dressing:
1 cup extra virgin olive oil
Juice of two lemons
2 tab. white rice vinegar
½ tp. Sea salt
2 Tab honey
2 Tab poppy seeds
Blend all ingredients for dressing in blender except poppy seeds. After everything is
Emulsified add seeds and blend for 30 seconds.
Drizzle dressing over salad. This will make more dressing than you will need for this salad but it preserves well.
