Cranberry Apple Tart


(serves 6)

This is a delightful change from the ordinary apple pie and so perfect for the holidays!!

1 prebaked pie shell
3 lbs. baking apples (approx. 5-6 rome or granny smith)
1 cup fresh cranberries
1/2 cup raisins ‘
1/2 cup maple syrup
pinch of salt
1/4 tsp. cloves ground
1/2 tsp. cinnamon ground
1 heaping Tab. arrowroot powder
1/2 cup water
1/2 cup chopped roasted walnuts

Optional: heavy cream for whipping or cashew cream (see The Passionate Vegetable)

1.    Peel, core and chop apples coarsely. Place in large pot with 1/2 cup of water. Cover, and bring to a boil, lower heat and simmer for 5 minutes. Add cranberries, raisins, syrup and spices and cook for another 10 minutes. Do not overmix as cranberries will “bleed” and turn mixture pink.

2.    Dissolve the arrowroot in the water. Add to apple mixture and stir until it thickens.  Continue to cook for 5 minutes.

3.    Pour into prebaked pie shell and bake at 375 degrees for 15minutes.Cool before cutting , sprinkle with roasted walnuts.

4.    Optional:  op with whipped cream, yogurt or cashew cream.
