½ cup extra virgin olive oil
¼ cup red wine vinegar
2 Tbs chopped fresh parsley
1 Tbs dried oregano leaves
2 cloves minced garlic
1 tsp sea salt
1 tsp ground black pepper
4 hot or sweet Italian Sausages
1 large red onion, cut into slices
1 large bell pepper, cut into quarters
1. Combine all marinade ingredients and place sausages, onions and pepper in large
2. resealable plastic food bag along with marinade. Refrigerate and marinate for 1-2 hours.
3. Prepare Mayo-Horseradish Dressing. Set aside and prepare grill. Drain sausages, onion and pepper; reserve marinade.
4. Grill sausages, covered for 4-6 minutes. Turn over sausages and brush with marinade. Add vegetables to the grill and brush with marinade. Grill for 5 minutes, flip half way through grilling time until crisp tender. Serve with Mayo-Horseradish Sauce.
