How to get through this humid summer! Try this Watermelon Salad that has a twist that will surprise you. Toss the feta cheese right before serving and bring it to your next BBQ. Summer is my season for loading up on all the wonderful fresh fruit in season locally. Farmer’s Market is abundant with ripe grapes, peaches, plums, melons, citrus and passion fruit, dragon fruit and cherimoya can all be seen at the market.
Spicy Watermelon Salad
2 lbs. cubed watermelon
¼ cup diced red onion
¼ cup lime juice
1 jalapeño chili pepper, seeded, and minced
1 Tbs. chopped fresh basil leaves
2 Tbs. chopped fresh mint leaves
8 ounces feta or cotija cheese, broken into small pieces
½ tsp sea salt
1 tsp black pepper
¼ tsp cayenne
Mix remaining ingredients in a large bowl. Add onion and toss just to combine. This will keep refrigerated for 2 days.
