Roasted Chicken with Thyme and Lemon

2 lbs. organic chicken parts with bone
¼ cup olie oil
3 tab. garlic
1/3 cup whit wine
1 Tab. lemon zest
2 Tab lemon juice
1 ½ tsp of dried oregano
1 tsp fresh thyme
1 tsp. salt

Preheat oven to 400 degrees. In glass baking pan (low sides) line it with parchment paper.

Place chicken on parchment paper and lightly salt and pepper it. Let it sit at room temperature for 10-15 minutes to allow salt to be absorbed.

Warm oil with all other ingredients except lemon juice and zest for 3 minutes on low.
Remove from heat add zest and lemon juice.

Pour over chicken and let it marinate for an hour. Bake for 40 minutes or until meat pulls away from the bone easily.
